Maybe someone, a woman perhaps, that seek vengeance over the space pirates raids and plundering.
Maybe the heroine’s sibling/family is taken as slaves and she wish to free them, and the galaxy from the pirates grasp?

I’m imagining a beautiful but ruthless superwoman, either an alien (possibly a noblewoman from a planet ruled by a superpowered upper class who left to pursue a life of piracy out of boredom) or a human woman who gained superpowers after being abducted by aliens, who controls a crew/possibly fleet by being far and away the most powerful member, and who generally believes that her incredible powers give her the right to do or take what she wants. She’s incredibly hedonistic, not only supposedly having a harem with specimens from throughout the galaxy but often launching raids to acquire new and rare foods, and even eating things only someone like her would even find edible, for the sake of new experiences with her superhuman senses. She keeps a variety of deadly predators as pets, sometimes effortlessly beating one into submission just to show off how powerful she is.
This a concept I can work with, but I think some details might require to be toned down or used sparsely, unless you want to go full "mustache-twirling and decadent". In my mind, it would be much more interesting having her playing the stern ice-cold woman of war most of the time, only to discover that she has a little asteroid or moon somewhere, where she indulges in the craziest stunts possible. A random idea that just popped up: maybe her "mates" aren't there willingly and she actually cut them a deal, if one of them can take her down they all go free with everything she ever plundered. As a result, her visits are actually something between a wargame and an orgy, with the mates actively trying to kill her, all while she revel in her invulnerability.

I do feel like she would probably get off on how much more powerful she is than anyone she comes across, and honestly be something of a showoff. For instance, every new crew member’s initiation involves being given a powerful plasma gun and told to empty the clip on her, which of course doesn’t hurt her in any way at all. She doesn’t bother with security around her quarters because none of her crew or her slaves can hurt her. In fact, she even lets people who try anyway live. She likes flashy, ornate clothing but goes into battle naked because her own flesh is the most durable material she has access to.
Origin-wise, I’m thinking she was a princess on an isolated planet where (at minimum) female members of the royal family have powers like hers. She left partially because she wasn’t heiress to the throne and partially out of boredom and frustration with all the rules and customs the most powerful people on the planet were expected to live by. Honestly I’m not really sure what kind of story this should be, though.

I wasn't suggesting that she didn't use her powers normally, but rather to differentiate her reactions based on if she's having fun or taking care of business.
For example, if a platoon of marines shot her with their plasma weapons, she would probably dispose of them quickly, without giving them even the time to aim a second shot. At the same time, if one of her lovers tries the same, she's probably going to let discharge the weapon completely, taking her time while posing and flirting.

I don’t know but this is my idea for the main plot/the hero to stop the space pirate.
Admittedly it is a thin plot but it’s a start?
