Would super senses affect a person’s eating habits?

Being able to taste everything that goes into what you eat, and possibly to eat things most wouldn’t consider food, probably would.

I believe it would definitely do. I'm not sure a character would eat something not considered food, but it's very likely that having more sensible tastebuds will change one's perspective on food. There is also the issue of how detailed the information is: being able to discern the exact chemical composition of food by taste alone might lead some people to question what the hell they're putting in their mouth.
There is also the issue of acquired tastes, which might take a completely different meaning.

Supers might end up going the Keto diet route to avoid tasting all the junk we as humans have added to our foods recently...

Definitely yes. Look up supertasters, people who have a heightened sense of taste. Bitter flavors are stronger to them, so they don't like certain foods.
